Ingredients for 4 servings

500 g spagetti (durum wheat spaghetti)

1 tomato

5 cloves of garlic

2 hot peppers

5 tbsp parsley

2 teaspoons of vegetable stock powder

100 ml of virgin olive oil

40 g cheese, e.g. Grana Padano or Pecorino

1 teaspoon basil

1 teaspoon oregano

½ teaspoon salt

Preparation

Firstly, cook the spaghetti according to the package instructions. Shortly before the end of the cooking time, set aside 2 ladles of the cooking water before the water is poured off.

Grate the hard cheese with a grater. Cut the tomato into small cubes and place in a bowl. Then cut the garlic into small pieces, lightly salt, wait a moment and mash with a knife. The salt turns the garlic into a paste when crushed. Put these in the bowl as well. Also cut the basil, oregano, parsley and pepperoni into small pieces and add to the bowl. Add the broth powder and the seasoning mixture is ready. Now add the 2 ladles of the cooking water - be sure to use this water, because the pasta has given off a lot of starch during cooking, which is now needed. Mix well and let steep for 2 minutes. If the seasoning mixture tastes slightly too salty, then it is correct.

Drain the pasta well and toss in a hot pan for a maximum of 1 minute. Now add the seasoning mixture, toss well and then add the grated hard cheese. This acts as a binding agent and the liquid seasoning mixture now combines with the pasta.

Before serving, add the cold olive oil and mix. Not previously! The oil loses its taste and quality extremely when it is heated. If you like, you can now add some hard cheese on top.
